Any tips on how to get the marscapone cheese "fluffy" in Tiramisu?
My family loves Tiramisu and I would like to make it for Thanksgiving dinner this year...however, every time I've tried to make it in the past, it tastes great, but the marscapone cheese is as runny as it is in the container I buy it in!
What am I doing wrong? It's been a long time since I've made it, but I only ever have used an electric beater to whip everything together...now I have a Kitchenaid mixer - will that help?
Yeah...no kidding...but good Marscapone is not fluffy either..
your kitchenaid will help in whipping the product, if it's still runny, (and this will sound funny), try a little flour or cornstarch at a time to get it to the consistency you want. Add it slowly and only a little at a time so you don't overwhelm the cheese with the thickening agent. Good luck!!

How do you make Peppermint ice cream?
I just got a new kitchenaid stand mixer with the ice cream maker attachment. I want to know the easiest way to make peppermint ice cream. I have a bottle of peppermint extract, milk, 2 pints of heavy whipping cream, eggs, sugar, etc. All answers are appreciated! Thanks!
I use peppermint candy to make peppermint ice cream. Here is my recipe
Ingredients
2 cups milk
1 cup sugar
6 egg yolks, lightly beaten
1/4 teaspoon pure peppermint extract
1 pint heavy cream
1 1/2 cups finely crushed peppermint candy
Method
Beat milk, sugar and egg yolks in the top of a double boiler until frothy. Set over simmering water and heat 15 minutes, stirring now and then at first, constantly toward the end. Cool, add peppermint extract and cream. Fold in the candy. Freeze in a crank – type freezer [hand or electric] or automatic ice cream machine, following the manufacturer’s directions.

Melted kitchen appliance cord?
OK, so my husband somehow melted off the plastic layer of my cord to the KitchenAid stand mixer. It's about an inch size damage. I can see green and a tiny bit of gold wires are exposed but not sticking out. Can I use electrical tape as a temporary fix? Can the whole plug be replaced or am better off just buying a new mixer, which I dread doing since my mixer cost me $200. Any advice gladly accepted=0
Do not use electrical tape as the fix. There may well be an insulation failure between two wires and this will cause a fire.
You can replace the entire cord but would likely need a new cord from the maker; sometimes you can replce the cord and attach it but this depends upon how it enters the mixer.
If the failure point is near the plug end, you can cut the wire and install a new wall plug; it shortens the cord but often this is not critical.
